4 egg yolks, beaten 2 tablespoons cornstarch 1/4 cup milk, lukewarm 1/4 cup water 3/4 teaspoon salt 1 tablespoon sugar rind of 1 lemon 4-5 egg whites 2 tablespoons butter confectioners sugar and cinnamon or lemon juice
Directions:
Combine yolks, cornstarch, milk, water, salt, sugar, and rind and still until smooth. Beat whites until very stiff and fold into yolk mixture. Melt 2 tablespoons butter in large skillet, 10-inches. When pan hot, pour in batter. Cook over low to medium heat, partially covered for about 5 minutes. It should puff up ad it may then fall. Serve right away with sugar and cinnamon or sugar and lemon juice or jam.
