Basmati Rice with Pine Nuts

Basmati Rice with Pine Nuts - 4 servings

Ingredients:

1 1/2 tablespoons butter, divided
2 tablespoons pine nuts
1/2 cup chopped onion
1 cup uncooked basmati rice
2 cups chicken broth

Directions:

Melt 1/2 tablespoon butter in small skillet. Add pine nuts and cook, stirring, until browned, about 2 minutes. Transfer to bowl, set aside. Melt remaining butter in large skillet. Add onion and cook, stirring frequently, for 3 minutes. Stir in the rice and nuts and cook, 1 minute. Add broth and bring to a boil. Reduce heat to lowest setting, cover and let rice cook for 45-50 minutes.
