Apple Filled Squash - 6 servings

Ingredients:

3 small acorn squash
1 20 oz. can sliced apples, drained
3/4 C packed brown sugar
1 tsp lemon juice
1/4 tsp ground ginger or cinnamon
1/4 C butter, melted

Directions:

Halve each squash lengthwise and remove seeds. Put cut side down in large baking dish. Bake at 350 degrees for 35 minutes. Combine apples, sugar, lemon juice and ginger. Turn squash cut side up and sprinkle with salt. Fill centers with apple mixture. Drizzle with melted butter and continue baking about 25 minutes more until squash tender. Sprinkle with additional ginger.
